This Easy Crème Brûlée recipe is a rich, indulgent dessert that can be prepared well in advance. You can buy vanilla sugar or make your own by placing a split vanilla bean in a jar of superfine sugar. The sugar will be ready after a couple of days. Add a final touch of elegance and garnish your Crème Brûlée with berries and a sprig of fresh mint.

- 6 egg yolks
- ½ cup vanilla sugar
- ⅓ cup soft light brown sugar

- Preheat the oven to 300 F/150 C.
- Place six ramekins in a roasting pan then set aside while you make the custard.
- Heat the heavy cream in a pan over medium low until it is very hot but not yet boiling.
- In a bowl, whisk together the egg yolks and vanilla sugar until well blended.
- Whisk the hot cream into the yolk and sugar mixture then strain into a pitcher.
- Divide the custard equally among the six ramekins.
- Pour enough boiling water in the roasting pan to halfway up the sides of the ramekins.

- Cover the pan with foil and bake for approximately 30 minutes, until the custard is set. (If you insert a knife into one and it comes out clean, it’s done.)
- Set the ramekins aside to cool.
- Once cool, place in the fridge overnight.
- The next day, preheat your broiler.
- Sprinkle the brown sugar evenly over each custard and broil for 30 to 60 seconds, until the sugar is nice and caramelized (but not burnt).
- Place in the fridge to cool and set.
- Enjoy your easy crème brûlée!
